Mild connection with bees

Our honey is produced by Buckfast bees, known for their resistance to diseases, efficiency, and docile nature. This variety ensures healthy hives and friendly hive management, resulting in less stress for the bees and high-purity honey, ultimately yielding a superior-quality product.

Same Spot Nectar Collection

Beehives are maintained in a fixed location to ensure that nectar is consistently collected in the same environment. This guarantees honeys with consistent flavors and aromas, as well as unique characteristics that reflect their natural surroundings.

Crafted by Bees

Bees collect nectar into honeycomb cells, where it turns into honey with the aid of their natural enzymes. As bees flutter their wings, they add more enzymes and help evaporate water. The wooden beehives play a role in maintaining a consistent temperature, managing humidity, and preventing the growth of fungi, enhancing the honey with unique subtle flavors and aromas.

Hand-Harvested

In line with the natural cycle, honey is hand-harvested from January to April, taking more time and effort but significantly enhancing final quality. Manual harvesting minimizes the risk of damaging wax cells and impurity mixing, ensuring gentle handling, reducing stress on bees, and preventing excessive heat during extraction. Beekeepers carefully select and separate honey from various parts of the honeycomb based on maturity, producing high-quality batches with consistent flavors.

Gently Blended

The harvest is placed in contaminant-free stainless steel containers to allow the honey to rest and settle. Subsequently, a 'skimming' process removes the top layer of wax and other natural impurities from the surface. The stainless steel container is then sealed and stored, protected from heat and sunlight. Before packaging, a gentle 'creaming' process is employed at a temperature of around 30 degrees to mix and evenly distribute the crystals, resulting in a creamy and smooth texture.

Nourished with nature

During winter, bee activity decreases, and they rely on honey reserves for sustenance. To ensure the well-being of colonies, beekeepers can reinforce bee feeding, if necessary, with a mix of natural ingredients such as sunflower oil, soy flour, brewer's yeast, honey, and pollen. This practice preserves the product's quality without compromising its taste.

A honey is the result of bees’ natural work in their hives. The soil, climate, and altitude of a region determine the variety of flowers available to the bees. The subtle nuances of colors and flavors in each honey reflect the territory it comes from, as well as how it’s harvested, processed, and stored. Argentina is one of top 3 world honey producers

Country’s geographical and climatic diversity is reflected in the wide variety of flavors of its honeys. To collect nectar from flowers, bees fly an average of about 3km. Due to the country’s low urban density and vast uninhabited territories, the collection takes place in areas of pure nature, far from urban pollution and intensive farming.

Making Wind Mountain Honey

In this region of the Andes Mountains, also known as the Wind Range, located in the province of Neuquén, in northern Argentine Patagonia, bees collect nectar from flowers growing at over 1,200 meters. Due to the scarcity of vegetation, honeys tend to be monofloral, from thistle, blue herb, or clover. These wild varieties, combined with the wind, low humidity, and the purity of the environment, result in amber-colored honeys in various shades that crystallize slowly and offer a sweet, smooth, and creamy flavor.

Many countries set limits for moisture content in honey; generally, honey is considered good quality when its moisture content is below 20%. If the moisture is too high, it can encourage fermentation and the growth of unwanted microorganisms. Fermentation can make honey taste sour, losing its natural sweetness and beneficial properties. Typically, natural honey has a moisture content ranging from 14% to 20%.

The typical pH range for honey is usually between 3.5 and 4.5 on the pH scale. A pH around 4 indicates that the honey is more neutral, meaning it’s not particularly acidic or alkaline, making it versatile and suitable for various uses. While the taste of honey doesn’t solely depend on pH, generally, very low values are linked to more intense flavors, whereas higher values within the range are associated with milder honey. A pH above 5.5 could give honey a bitter or unpleasant taste, while a pH below 3 on the pH scale could make it too acidic.

High levels of free acidity can indicate a more intense flavor, making it ideal for specific uses like dressings or marinades. Moderate levels are perfect for those seeking a smooth taste experience and are versatile for various applications, from sweetening drinks to complementing desserts. Although standards may vary locally, generally, levels above 40 meq/kg could suggest that the honey has undergone unwanted fermentation or has been stored under inappropriate conditions. Levels below 10 meq/kg may indicate honey naturally low in acidity due to its floral source or that it has been diluted with water or other liquids, potentially resulting in a lack of flavor complexity.

The HMF (hydroxymethylfurfural) is a byproduct of fructose breakdown that forms slowly during storage and rapidly when honey is heated. In the hive, honey is usually below 2 mg/kg, but levels start to rise with temperatures above 20°C. While specific standards may vary by region and local regulations, generally, more than 40 mg could suggest excessive heating due to improper processing or storage, potentially impacting its taste and quality. Levels below 40 mg indicate proper processing and storage, and in fresh honey, it’s common for HMF to be below 10 mg/kg. Levels around 5 mg suggest very fresh honey.

The quality and nutritional content of honey are assessed through laboratory analysis for four key values: moisture level, pH, free acidity, and HMF level.
